I made my first Pavlova in 2020. This dessert has not only challenged me as a chef, it has been a catalyst in the growth of my business. To date I have sold over 300 pavlovas and I owe that to those who believe in me and believe that my Pavlova stands out from the rest. Few know that my Pavlova is a fusion between the traditional Russian recipe and the modern Venezuelan take. I fused both techniques and recipes and created my own take.
